I want to change what programs (3rd party) can access my camera and microphone on my Mac mini running Catalina.

I've gone into security and privacy > privacy but for each of them I cannot see a way to add an application.

I've tried dragging the app from finder, but nothing happens

Can someone please point me in the right direction to do this?

The app has to ask for permission to access those devices. Open the apps in question, then allow the access when they request it. If you are trying to stop access to those devices, you will have to remove them from the Privacy access in System Preferences.

Whilst acknowledging that I don't run macOS Catalina, I believe the process is similar to recent Operating Systems.

As you say: System Preferences > Security & Privacy > Privacy. Then click on the padlock (bottom left), enter Admin Password. Now click on Camera (and any other items to which you wish to grant access). Then click on the + sign, then navigate to the apps you want to add.

Thanks @ferrarr, that makes sense.

@IWT - thanks, that's what I thought should happen but no. There's no + or - so you have to follow ferrarr's instructions

Bob is spot on with how this works in Catalina, you don't do this beforehand, but rather allow or deny access as needed. Once an application is run and has made a request, it will show up in the appropriate list for the thing being requested. If you allowed it, it will have a checkmark, if denied, it will not. You can, obviously, toggle that checkmark if you change your mind one way or another.
