Other than changing screen resolution, is there any hack to make the contacts and reminders apps text larger (notes and calendar have a GUI preference)?

Other than changing screen resolution or using the "scaled" setting of your display, there really is no way that macOS allows for increasing the font size (text size) of some of its included apps. You might give the TinkerTool app a try to see if that will work. It's a free utility that can be used to change various settings of macOS but sometimes it doesn't work in the way it should.

They have the zoom option, under one of the options in the Menu Bar.

The "zoom" feature just expands the application window to full screen but does not enlarge the text.

Thanks for that reminder Charlie. I haven't used that program in quite some time.

The only way I can think of to do this is to make use of the accessibility features in macOS. The Zoom in / Zoom Out features can be triggered from keyboard commands/shortcuts. I've used it for Contacts several times.

Just in case any of the suggestions here could help, but they might be a bit to generalized:
How to Increase All System Font Size in Mac OS X
How to Increase All System Font Size in Mac OS X

Or maybe have a look for an alternative Adderss Book that would allow different size text.

Maybe even some oldies if they still exist:

Or try a google search for some newer ones...

EDIT:
And I don't think this crazy overkill enlargement would help much, but thought I'd mention it anyway:
