I was feeling a little remiss for not having really tested Safari 12 since the upgrade to Mojave so I thought I'd give it a go.
First thing I found was it's fast, really fast.
Second thing I found was the extension gallery. No legacy extensions ! Now you are limited to a small range of approved extensions most of which are "pay for" and are effectively applications on the App Store.
Here is what happened when I tried to add my ExpressVPN extension;

Strangely my Enpass extension is still working a "hand me down" from the previous version of Safari although it does not appear in the Gallery.
I assume the list will grow over time but it sure is a departure from the past versions of Safari. I suppose it reflects Apple's current emphasis on system security.
I wonder what others think about this. I'm going to continue with my test, I've been disappointed with features and functions in the past but performance seems pretty impressive.

Well, the "unsafe" extensions can still be activated. Ghostery, for example, was deemed "unsafe" but if you have it, it works. Now maybe in the next iterations those "unsafe" things will be banned, but for now, give it a go.

Just as Jake says, have a look here:
Bypass ‘Safari no longer supports the unsafe extension’ in macOS Mojave
If the extension you’re looking to install isn’t available on the Safari Extensions Gallery or App Store, not all hope is lost. It requires manually installing the extension, so you won’t get automatic updates for it in the future, but it’s still perfectly usable and is the only way to get certain functionality until developers update their extensions for you (which some might not even do). This article presumes you’ve checked whether your extension exists in an Apple-approved form elsewhere

And no, I haven't tried nor can I, as I cannot run macOS Mojave on my 2011 iMac.
