How to change default font in mail

Mac Mini 2.3 GH i7, 100GB internal storage, 3TB external storage, 2 15" Monitors. OSX 10.11.4
I for the life of me can't figure out ** to change the default font in mail. I go to mail preferences/ fonts and colors and select a font that I like but can't seem to make it change from the default.

Help please

Those changes are only going to impact the way the mail app looks on your Mac not when receiving mail. Your incoming mail will be whatever the sender has chosen for fonts and attributes. When composing mail, you can select font, font size, color, etc, from the top menu.

What I want to do is set a default font for when I compose a message so that I don't have to set it each time

I believe you set the default font etc in mail's "Composing" preference, not "fonts and colors"

There is no way to set the default font from the Compose preference in Apple Mail. As far as I'm aware, the font and color is set from the compose menu but as the OP indicated, it doesn't stick.

Mine does too. Don't know why the OP is having difficulty unless he's trying to reset for each mail he creates.
