iPhone never remembers cookies

Hello,
Recently Safari on my iPhone never remembers cookies so every time I go to any website, I always get the message about agreeing to cookies.
In Safari Settings, I don't have "Block All Cookies" checked and I tried switching "Prevent Cross-Site Tracking" but that didn't make any difference
Any suggestions.

I presume you meant switching OFF "Prevent Cross-Site Tracking"?

The thing to note is that the release of iOS 11 included an updated version of Safari and a feature called Intelligent Tracking Prevention. Enabled by default, it blocks certain cookies from websites, making it harder for advertisers to follow users around the web.

This can, apparently, be disabled by switching OFF "Prevent Site Tracking"; but various forum sites differ on this.

If you're asking how to enable cookies for Safari on your device, just follow simple instructions. Go to the Home screen of your phone, select the Settings icon and select Safari from the Settings menu. Then select Accept Cookies from the Safari menu and From visited from the Accept Cookies menu. After that, just return to the home screen and refresh your browser.

Have you been accepting the "Cookie Notice" many sites have started flogging due to the implementation of "The Cookie Law" and their new popup notice:

Thanks for all your replies.
@IWT: I meant either switching on or off "Prevent CrossSite Tracking". I was told this could be the problem, but it makes no difference.
@Maria Kate, I've gone to Settings>Safari but I can't find the things you mention, "Accept Cookies" and "From Visited". Have these changed in later versions of iOS?
@pm-r, yes, I've been accepting the cookie notice but like the 2nd link, it never remembers. That link is from 2012, so I would think there is a fix somewhere now. Not sure what they recommend on the up to date iOS, is that "Remove All Website Data" from the advanced tab?
