Unless she is into gaming or wanting to do CAD you might consider a 4K HDTV as a Monitor. My main uses are Photography and Spreadsheets and have no complaints with my setup using a Samsung 40in 4K...
Another quick, cheap and easy speed up may be freeing up space on the HD. If you have less than 10-15% left on the HD the system can start to bog down.

I use a 40in Samsung HDTV as the monitor for my 2019 MacMini. Using the right cable it should just be plug and play. The most you probably will have to do us adjust ‘Overscan’ in the Display settings.
