    You don't do that in Mail. There is a separate app called Contacts. Muck around in there, and if you have questions, post back.

    Our Senior Member, toMACsh is wisely correct in pointing out that the Contacts app is where you create, modify or delete contacts.

    However, it occurred to me that your question could be interpreted in a different way and that, just maybe, you were referring to something else. Maybe you were referring to Recipients (not technically contacts) within Mail - that is - those from whom you have received emails.

    On the off chance that this is so:

    Open Mail. From Top Menu Bar, Click on "Window", then Choose "Previous Recipients" from the drop down.

    This will open a window with every person/company ("contacts of a sort") who has sent you an email. You can scroll though the list or use the small Search box for a particular name.

    You can then either "Remove" them or "Add them to Contacts app" if not already there.

    Even if I'm off on the wrong tack, it's a useful tool worth knowing about.

    Ian that's a very useful tip. I just did it, but who's to say if I'll remember it later? I tried to give you some rep "points" but apparently you were the last one for me, so I wasn't allowed to do it.
