If you downloaded it from the macOS App Store, you can use Launchpad (in Applications or Dock), then just click and hold on AdGuard until it starts jiggling. Then click the X when it appears. You will have to make sure it is closed, and the icon is no longer in the top menu bar.
Please backup. Everything has a life cycle, unexpected and warning free. Nothing will last as long as you want it to.

Is the AdGuard icon in the top menu bar? Or is it open in one of your browsers?

If you click on the icon, do you get the option to Quit?

Can I ask why you removed Adguard as it is classed as one of the best, although it is rather pricey now. If you need an adblocker
can I suggest 1 Blocker. Available at App Store for 4.99 per annum.
