i've seen software for sale that allows you to rip mp3 files from a DVD soundtrack; like from a music concert on DVD...... but only for WINDOWS OS. is there software for MAC OS? or some other way to create mp3 music files from, say, a sting video on DVD?

There is a piece of sotware for the Mac - OSeX - that will split the video and audio tracks from a DVD movie. You should be left with .vob files and .ac3 files. Then get a program like bd4go and convert the ac3 into AIFF, and voila.
