Is there any way i can change the settings around for my MacBook Pro so that when i shut it... it only turns the display off and doesn't go to sleep?

You need a 3rd party program like InsomniaX to do it but you should be warned because you can overheat the machine and damage it

At the moment I have an external mouse, monitor and keyboard connected to my MacBook. Closing the screen will put it to sleep, however, hitting a key on the external keyboard will wake it up on the external monitor.

Not sure if this is what you want though.
