I use iwork '06 and my dictionary default is set to american-english.
It keeps trying to change words like 'organisation' to 'organization'.
It's really hacking me off. I looked in the help to find out how to change the default dictionary to UK-English and it says:
"If you'd like more options, including the ability to choose different dictionaries, choose Edit > Spelling > Spelling to open the Mac OS X Spelling window."
However, the spelling window doesn't give me this option. (see attachment)
