From the Safari menu its a simple task to empty the browsers cache.
Is there a way to change the preferences so that the cache is automatically emptied when Safari is shut down, just like Firefox?

If you save this as an application, it should work. I made your log-in folder "Del" in the AppleScript, so you'd have to change it to whatever it really is.

tell application "Safari"
quit
end tell
tell application "Finder"
delay 1
if every item of folder "Safari" of folder "Caches" of folder "Library" of folder "Del" of folder "Users" of startup disk exists then
delete every item of folder "Safari" of folder "Caches" of folder "Library" of folder "Del" of folder "Users" of startup disk
end if
end tell

Check out a program called Onyx. It has tons of options for cleaning out caches and other temp files/folders. You can set it to automatically do this on whatever schedule you want, be it daily, weekly, or monthly.
