Is there a way to take screenshot in DVD mode?

You can take screen shots of a DVD with VLC not DVD Player. I don't know off the top of my head about doing a partial rip.

You can use an App like Handbrake to rip different chapters from a DVD and then use Quicktime, iMovie or Final Cut Pro to edit them down
