In clock-speed, not much, but dtravis7 just informed me that they are 64-bit, so if you have a program that can take advantage of this fact, it will run much faster.

They also run cooler and quieter.

Also, the higher end models of the Core2 Duo have a 4MB L2 cache versus 2MB on the Core Duo

It's funny, coz the G5 is 64 bit. Apple went one step backwards and then came back. But really, 64bit isn't such a big deal for us consumers. It's really only gonna make a diff in very specific apps like Mathematica.

Actually the initial power consumption comparison seems to suggest that the core2duo chips will run just as warm... they'll have more performance though, so the watt/performance ratio will still go down a bit.
