right now I have it set at that resolution but its not mirrored... what I want to do is just shut the lid on the macbook, and use my 21" display, but have it at 1600x1080... the most I can get it to was 1280x800 on the 21"...

so how can I do this?

ok I just got it to 1680x1050 but the problem is the screen is not streched... there is alot of black space on the sides...

sorta like this pic.

if I dont mirror it though, it fits fine, screen is streched

Your MacBook supports external display resolutions up to 1920 x 1200 on Apple DVI displays and up to 1600 x 1200 on VGA displays

If you want it to fill the screen, you will have to adjust your monitor's geometry settings.

And to make it so your macbook doesn't sleep when you close it use Sleepless, which now that I think about it may not be universal but check anyway.

Mirroring will only go up to the highest resolution that the notebook will display. There is no way around it. What you can do, instead of mirroring, is extend the desktop and make the larger display your primary screen. That way your desktop and dock and everything will be on the larger monitor.
