How important is RAM for Video/Photo editing? Is this primarily a processor function, ram function or both?

Video editing strains the entire system: You're working on very large files, that need processor intensive calculations to manipulate and edit them...
The bits of video that are being worked on or watched are usually buffered into RAM (At least as much as possible is).
It's similar for photo editing.
If you're doing this occasionally , I'd go for one gig - that should give you enough performance for it to be enjoyable.
If you're going to be doing this every day with large files, I'd go for as much as you can afford/fit in your machine.
