When I try to draw/write free hand in mac preview I end up selecting a line that ive drawn and dragging it across because i clicked on the line itself. This is not ideal for me, as I dont want to select what i write. How to do I turn this off or is a there Preview like app that could do what I want?

Welcome to Mac-Forums..

Within preview, choose View->Show Markup Toolbar if not already shown. The third option in that toolbar from the left is a pen icon with a path being drawn. Click on it (should turn blue) and then you can draw whatever you want. Each time you start and stop is a separate "drawing" that can be moved around.

Preview is great for light annotations, but for greater control you check try Skitch
