how to join tracks already in my library (not on cd)? using itunes

Not in iTunes. You will have to use another program for that. You can use an app like this to do the joining.

mp3 trimmer? I dont want to trim I just want to take 8 mp3s and turn them into one? this app will do that? I see it's not free. must be some restrictions on it im guessing?

You can do that for free with QuickTime Player X (free program already on most Macs). Here's the process in a nutshell:
1. Select a track you want to use in iTunes, right click the track and choose "reveal in Finder." This step will show find the file.
2. Open the file you just found in QuickTime Pro.
3. From the QuickTime Pro Edit menu choose "Add clip to end"
4. For each subsequent track you want to add repeat step 3.
