I am transferring to my Macbook Pro and find the font for emails very small.
I realise there is a command to increase the size of individual mails, but is there any way of setting a font size applicable to every mail message?

Try Mail > Preferences > Fonts & Colours.

There, you can make adjustments which may help. Best I can offer just now; but I'll research this and see if something else comes up.

Nice find, Sue. It tends to support my "gut feeling" that that was the place to go.

I think there was also an update to Mail recently (couple of months) to fix a problem where some fonts in forwarded mails were very small. I had see the phenomenon, so I noted the fix.
