I use Norton Ghost to make images on PC's, is Norton Ghost available for MAC OSX, if not, is it possible to make an image of the HDD from a MAC and save to DVD?

I think you can use disk utility to make the disk image and also urn from there or put the image in a burn folder than clcik burn.
