How can I remove old addresses from showing up when I want to email a photo?

Clean up your contacts list in Address Book (aka Contacts in Mountain Lion and Mavericks).

And if that doesn't work, try opening (in Mail) the "Previous Recipients" list and see if the stubborn email address is in there.
