I'm planning to take out the HDD from my current Windows PC and put it into a USB 3.0 enclosure. It's got all my documents, picture, music, etc on it from my PC. I want to be able to keep it for a while whilst I migrate over to my Mac Mini in case I need something off it.

The drive is a 1TB drive with two 500GB NTFS partitions (C: and D: in my Windows PC). Would the Mac Mini be able to read both partitions off it?

The Mac Mini will have no problem reading either NTFS partition but will be unable to write to them without a third party driver. As for third party drivers to read and write to NTFS from OS X, we recommend Paragon NTFS ($19.95 US).
