What is the best, price not an object, analog to digital converter for making/editing SD and/or HD video?

Canopus usually comes highly recommended. Either the 110 or the 55.

You have to import using something like iMovie or Final Cut.

Elgato is the other one and has the advantage of importing through it's own software, producing a single video file, where with the Canopus and iMovie, you get the import broken up in to multiple files.
