How can I get this stencil effect?

13" MBP - 2.7 Ghz, Intel Core i7, 8GB RAM.
Example:

Using Photoshop, how do I get the above stencil effect where you see through the letters to the background? It begins with the words "INDEPENDENT VENDORS, MUSIC..."

Set the background to whatever you need.

Then, use a white layer, insert text as a different color. then, select the text color and delete it. That will leave you with the white stencil and whatever background you wanted.

I over-generalized, but I dont have PS in front of me to go detailed.

Hmm, Pixelmator has a text option of Outline - so you could pick any text and any font and leave it as outline. I browsed CS5 but didn't see a similar option - I don't have CS6 loaded yet.

Way... way too many specs to list.
Even easier. Fill your background with whatever you want. Create a new layer, color it how you want. Then select the Type Mask Tool (in this case horizontal). Type your text, it'll leave the good ol' marching ants.. then hit delete.
