Simple speech recording?

If you you voice into the search box in the app store, there are loads of Voice memo taking apps

You're using the built-in microphone. It doesn't really matter what app you use, the quality is going to be limited by that. If you want top quality for voice, I'd suggest a USB mic of some repute like the ones made by Blue.

Easier than downloading an app (I would have thought) would be just opening QuickTime X and choosing "New Audio Recording" from the file menu. Then press record.

Blimey! I didn't realise you could do that! Just tried it with the built-in mic...

Well said. Sometimes we forget just how much good software is on the machine right out of the box. Nothing against other "voice memo" apps but for what the OP wants to do QuickTime X will do nicely.
