I've recently used iConverter+ to change the format of some files from avi to mp4. One thing I've noticed is that the converter file size is approx 2/3 the size of the original avi file. I can't notice any loss of quality but was wondering how it achieves this? is it a 'more efficient' file format or is there some loss of quality that I haven;t noticed

AVI is a container. It can contain several different formats. Some better than others at compression.

MP4 is reasonably efficient in the quality vs size department.

But again it all depends on how the original file was created and the mp4 conversion settings used
