1. Are you trying to put the date an time in the menubar or trying to put iCal there? For the date and time open the date and time preference pane. There is a Clock tab with all the settings you'll need.

2. Opening Top Sites in tabs or windows that setting is in Safari's preferences. Once the Safari preferences are open click the General tab. There are top down menus there that control what opens. Its pretty self explanatory. I think you'll catch it.
