Adobe Reader is to read PDFs (which Preview, built into OSX can do anyway).

But to use you tube no other software is needed. Just open Safari and go to youtube.com

What problem are you having?

You need Adobe Flash installed to watch videos online or some sites have begun to use HTML5 which requires no additional plugins.

What happens in Safari or your chosen browser when you visit youtube and attempt to watch a video?

You Tube should drop to HTML5 if you don't have flash installed.

Personally, rather than having the flash plugins installed everywhere I prefer to use Chrome where flash is unavoidable. Chrome has flash 'baked in' so doesn't need the system wide plugins at all.
