In Finder go to Applications folder and drag the iTunes icon to your dock. There are other ways but this works.

It makes a shortcut. It does not move it from Applications. Don't worry!

Drag the iTunes icon with the alias name to the desktop and let it go "poof". Now open iTunes from your application folder, when the iTunes icon appears in the Dock, right click on it, select options, "keep in Dock". You're done.

Try it as suggested above, an alternate method.
But, do you have an alias of iTunes in your Applications Folder? If so, to find out where the "real" one is, highlight the alias icon and select Get Info.
