Buying a camcorder

Hi, I really want to purchase a Full HD camcorder and I've got so many questions that need answering. So if any of you can help it would be much appreciated.
Currently I have a really old Sony camcorder which records onto a tape (I've had it for years) and I'm editing video using iMovie 11 but will most likely upgrade to FCP in the future as I'm already finding it quite limiting.

So my search for a Full HD camcorder is on, but I'm struggling as
* I don't know what the best format is to record in? Therefore not really knowing which camcorder to buy.
* Looking on Apple - iLife '11 Help - iMovie '11 Supported Cameras in the table under ' Additional information' quite a lot of the cameras I like have image stabilisation limitations. Is this something to be really concerned about?
