Ripping and saving with XLD

I've recently got XLD to rip some CD's. However, I can't get to to to keep albums together, it rips the tracks saves in my preferred location but as individual files. I know it must be somewhere in the detail in preferences but i can't see what I'm looking for, can anyone help please.

I don't use XLD enough to recall but isn't there a way to "tag" the song files with artist name, album name etc?

If so, then when you import them into iTunes the albums will "stay together." Or of course you can manually create folders and organize them yourself by hand.
