I had been using a beta version of Adobe Audition for Mac. I deleted the beta version before trying to install the purchased version, without deactivating it first. Now, when I try to install the purchased version, I am told that it is already installed. I cannot deactivate it because the program has been deleted via AppZapper. Is there any way to deactivate it now?

Download the beta version again and see if an uninstaller comes with the program. If so use that.
