copying items to external disk,,,

You should be able to simply drag them on to the disk assuming the disk is formatted with a filesystem that OS X can write to. It can natively write to HFS(+) and FAT32. You can also write to NTFS formatted drives using something such as NTFS Mounter.

If you are talking about backing up your data and you have 10.5 or later then I think you may be looking for Time Machine located in Applications folder.
