Is there a way to set up my powerbook so that it will only wake up when I touch a certain button?

I don't think so. I did a search on version tracker and didn't find anything. And I don't believe there's anything in OS X that does it.

A PowerBook will wake up when any key is pressed, or if there is any activity on the USB bus (device plugged in, device turned on/off, external mouse clicked)

I don't know of any way of circumventing this; it's not so much a software thing as a PMU thing.
