Being a newish switcher, I have managed to change the folder labels on Documents and Applications in the the dock. The Address Book label is covering the Applications folder and the first item in the Documents list is covering the Documents folder. How can I bring back the original labels?

Don't exactly understand what you mean but try this,
Drag the folders out of the dock, you should see a puff of smoke.
Then re-drag the folders into the dock from the Finder.

Yep, that will fix it. Choose Folder from the Display As list after you right click or Control-click. When Stack is chosen, the icon of the first item alphabetically appears, as you've observed.
