Or if u are talking about users - go to System Preferences > Accounts. Click the plus button to add new User and Login Options to enable Fast User switching.

Cool. Go to keychain and open up the App. Find the whatever it is you want to change.
Double click on it and you get this window.

Click on the *show password* and your password will come up, in the bottom field.
Change it to whatever you like then click the *save changes* and then you should be right to go ...
Hope this helps some :)

Cheers

I'm a bit confused after the previous replies as to what you really mean after reading your original post.
So I will answer what I think you mean, namely how to get rid of the dropdown list of previously used user names on an web page in Safari/Firefox.

In Safari the remembered user names/passwords can be edited/Deleted in the Preferences under the "Autofill" tab and then clicking edit behind User names and passwords.

In Firefox under the "Tools" menu click "Clear Recent History…" open the "Details" drop down menu and check the "Form & Search History" item.
Also be sure to deselect anything you want to keep.

Sorry if I read your post wrong.
