what exactly does G4, G5 mean?

In addition to the great site provided by Bob, the designation "G" stands for "Generation". So the "G5" is actually a "PowerPC CPU Generation 5".

And G1, I have been told, started the early models off, G2s moved on to the 603e chip, G3 saw the launch of the new architecture, and improvements became G4 and G5 and this was discontinued on the launch of the Intel architecture.
