yes appcleaner is excelent

anyway, you can always check the website where you got the program to see if they specify any uninstalation steps, usually some Library/whatever file that the program needs

If the program comes with an uninstaller - use that. Speed Download Manager, MS Office etc will not give up that easy.

Well most the stuff I have deleted from my comp are apps and random programs like camouflage..So Im good?
Im going to make a folder and start storing the un-install folders if it comes with the program.

Simple rule: If it doesn't come with an uninstaller, just trash it. If it does, use the uninstaller.

Those "random files" will not slow you down any way "in the future". Remember, this isn't Windows.

just wondering, when soem of those config files or .plist files get left behind, do they just get picked up by the system mainetanance scripts?

Way... way too many specs to list.
nope, as far as the system is concerned they're simply files. Flat text files at that.
