Moving e-mail from windows xp to macbook pro

Hi -

I just purchased the new 17" macbook pro. I love the machine, but I am having 1 major problem!

I had all of my mail (filters, stationary, address book, etc) on my windows maching in eudora pro. I need to switch all of the info over to my mac. I have access to eudora/mac, macmail, entourage, thunderbird.

Some of the things I need to be able to do in my new mail program are:

edit incoming mail (I need to be able to add information after receiving the e-mails)
schedule outgoing e-mail on a schedule - ie send this message on August 9th
mark incoming e-mails in some way so I can see which I still need to attend to
search mail so I can find previous orders
set up multiple mailboxes - some nested and some not
filter incoming mail into appropriate mailboxes
being able to convert names and addresses to all upper-case would be nice, but not critical

I don't think that macmail will handle all of my needs. Does anyone know how to move over everything that I need from my windows machine to my mac? If possible, I would like to be able to keep everything the way it was on my old machine.
