I've just ordered my first Mac (a MacPro) on Saturday, and should be picking it up on Monday.

I have a 500GB HDD (NTFS) in my PC that I use for storing music and other media, and I'm wondering if I'll be able to simply pop it in the MacPro without having to format/transfer the data somewhere else, or if the process is more involved. I'm okay either way, as long as I'm going to lose all the data that's on there and have to re-rip 600+ CDs...

If you simply want to copy data from a PC to a Mac, then there's no need to reformat that drive as OS X can read NTFS drives just fine. It's when you try to write to an NTFS drive with OS X that you run into problems.
