Well I might have a work around for you. Play the .rm file, and record it with wiretap. Once you have it converted to aiff, use iTunes for the mp3 conversion. Does that make sense to you?

I don't think there's really a way to do this, other then the wiretap method mentioned below... Sound Converter doesn't work with RM.
