Media intensive performance help!

I'm a director of a show that is incredibly media intensive, requiring 3 video outputs and 2 audio outputs it would be incredibly useful to be able to control all of these from my lovely Imac(Intel, Aluminium, running Leopard), but I don't have a clue where to start!
Any help would be greatly appreciated.
