I'm not sure I quite understand. Just set up 3 cameras, have them record, and then when you're editing just take the clips you like in order. That should do?

Or buy an external mic to record the sound.

If you're running iMovie 08 you could also install and run iMovie HD at the same time and record direct from two sources, such as a built in iSight and an external iSight or miniDV camera. Just try it.

The easiest is probably to just record on three cameras as KeithTeeple mentioned, bring the content into iMovie and edit the scene together there. It would be easier in Final Cut Pro as it can handle syncing and editing from multiple sources, but that is an expensive option.
