issue with mail 3.3

Im a recent switcher and loving mac. however, i'm having some issues with mac mail. how do i delete my mail account and just set everything up from fresh. When i go and click the - sign on my mac.com account its gone, but when i exit and go back in, its there again. I want to set up gmail and im having some issues with it. I'm using pop.

Also, for ical to send me reminder emails does that mean i have to use mail.app?
