Dual Boot Choice at Startup

How would I make my mac give you the choice between windows and mac every time without holding down option like maybe an firmware entry.

Install rEFIt. You'll get a graphical menu on bootup.

rEFit is good but probably overkill for what you need. Instead, try Bootpicker, free software from here:

http://www.bombich.com/software/bootpicker.html

Works great and doesn't require fiddling with the EFI.
