The previous owner of my iBook said the laptop came with 256 and he bought a 1Gig chip to add on. I am familiar with PC memory where it is all removable. Is this the case for Mac's? Can I remove the 256 and replace it with another gig chip?

iBook's came with 256 megs of RAM soldered onto the logic board, so you cant remove that. The 1 gig chip add on is the only thing that is removable, it's under the keyboard and then under the airport card.
