Do you think they would let me start up one of their floor models from my bootable HD so that I can "test drive" the computer?

I don't see why not. Just talk to one of the floor sales persons and ask them to do the hookup and boot the machine. After all, they're in the business of selling machines. ;D

thanks, i want to see how much faster my computer would be if it was an 8 core mac pro, lol
