is there a list of speakable commands for itunes? I want to be able to say "next" and have it skip to the next song. So far only "play" works. I can't figure out how to get it to pause, skip, go back, etc. Any help would be greatly appreciated.

Say "Show me what to say" or "Open Speakable Items" after you have turned Speech Recognition on.
Or look in ~/Library/Speech/Speakable Items

If you click on Open Speakable Items Folder you will see a complete list of speakable items that Apple has pre-programmed for the Mac.

You should be able to find some pre-existing scripts to add. (for example)
