I have a 15" 2016 MBP. I'd love to make it zip like new by putting in a SSD. However, doing some reading has me thinking that I can't do that on this model, that the existing hard drive cant be taken out.

Am I right here? I'm hoping I'm wrong but fear I'm not.

Your 15" 2016 MBP already has a SSD. What exactly are you trying to do, replace the current SSD with a larger one?

Yeah. I'm close to using up the entire 500 gb one I have and would like the extra space. I was thinking of a 1 TB one.
