We just had to switch from Verizon to Spectrum Mobile (1/3 the price!) iMessages no longer appear in a blue bubble, so our texts are not being encrypted. Is this because we are not with an Apple approved carrier? Where we live Apple only approves T-Mobile, ATT and Verizon and they are all crazy expensive.

No, the color doesn't have anything to do with the carrier, AFAIK. Did you have to change your number in the move? Did you make the change at AppleID.apple.com to your account to show that new number is now on the iPhone?

The color of the bubble has to do with whether the text was sent via Apple's messaging system (blue) or your Cell carrier (green). But Apple has to know the devices attached to your AppleID account to know to use the Blue Messaging.

The blue bubble indicates an iMessage so, check the messages settings in Settings. It will tell you if it is active or not. If not it will suggest you turn it off then back on. You may then get a message saying your provider may charge you for iMessages. Wait for it to activate. If it doesn't then your provider does not support it.

Addit: As Jake said, changing your number changes everything. I made the assumption you would have kept your existing number.

Same phone number, same Apple ID. Turned phones off and on, and same deal. Finally changed when I received a text from another iPhone. Totally bizarre. Thank you for explaining

Must have taken Spectrum a while to get your account sorted out. Glad it's working for you now.
